Coconut Beef Stir-Fry
1. 500g packet Hokkien Noodles
2. 2 tbsp vegetable oil
3. 400g beef strips 2 cloves crushed garlic
4. 1 tbsp grated ginger 2 large carrots, thinly sliced
5. 1 large red capsicum, thinly sliced
6. 1 tbsp sesame oil
7. 1 cup snow peas, halved
8. ½ -1 cup roasted, salted cashews
9. ½ – cup dark soy sauce (Kecap Manis)
10. 1 cup coconut milk
11. 2 green spring onions, thinly sliced
Place noodles in a large heatproof bowl. Pour over boiling water and separate noodles with a fork. Drain well
Heat half the vegetable oil in a wok or large frying pan. Add beef in batches, stir-fry until browned all over. Remove from wok.
Heat remaining vegetable oil in wok. Add garlic, ginger, carrots and capsicum. Stir-fry for about 2 minutes or until carrots are almost tender.
Return beef to wok with sesame oil, snow peas, cashews, dark soy sauce, coconut milk and noodles. Stir-fry until snow peas are tender and noodles are heated through. Add spring onions and toss well.
